The facilities of the South Market Square include the Potato Square, warehouses, restrooms, covered areas, kitchens, and administrative areas, among others. The El Roble consortium is responsible for the maintenance and construction of these areas. This tradition of markets during the colonial period occupying Bolivar Square, later relocated to what is now the Royal Square, and currently, the market square is located in the Southern Service Complex, where the people of Tunja do their shopping on Tuesdays and Fridays, and tourists can find products from the region and sample traditional cuisine.
